Introduction

Dietary nitrates have attracted growing interest in sports nutrition due to their potential role in exercise performance. Research suggests that, at appropriate intake levels, inorganic nitrates may help support exercise efficiency, power output, and endurance capacity (Larsen et al., 2007)

Interest in this area expanded significantly after research highlighted the performance-related potential of beetroot juice, a naturally nitrate-rich source. Beetroot and other green leafy vegetables are among the most concentrated dietary sources of inorganic nitrate.

After consumption, nitrate is converted in the body to nitrite and circulated in the bloodstream. Under certain physiological conditions, nitrite can then be converted into nitric oxide, a signaling molecule involved in vascular and metabolic processes.

Beetroot (Beta vulgaris) is a root vegetable traditionally consumed in a variety of forms, from fresh salads to cooked dishes. Known also as table beet, garden beet, and red beet, it is recognized for its naturally occurring nitrate content as well as its vibrant red color.

Sabeet® is a standardized beetroot extract derived from beet root and provides a concentrated source of inorganic nitrate. Beetroot also naturally contains a range of nutrients and plant compounds, including magnesium, potassium, vitamin C, and betaine.

After consumption, dietary nitrate is converted in the body to nitrite and may further contribute to nitric oxide production under certain physiological conditions. Nitric oxide is involved in normal vascular and metabolic signaling processes.

In addition to its nutritional value, beetroot has long been used in food applications, including as a natural coloring ingredient. Compounds such as betanin are commonly used to add red color to foods such as sauces, desserts, jams, and other products.
